Nonya Kuih Bingka Ubi Kaya

This is a tradition Nonya baked tapioca cake. Thanks to my sister-in-law(Irene姐), who shared this recipe with me. She was married to a Penarankan family and her mother-in-law had passed down to her their family tradition secret recipes. I will not post the recipe as I had made a promise to my sister-in-law.

This Bingka Ubi is difference from those I had tried. It is very soft in texture and at the same time you can even bite into fine strips of tapioca. The recipe didn't use egg or flour at all as my sister-in-law explained to me that egg and flour will cause the kueh to be hard.

Hi

Wow, this is the recipe I have been looking for. Your Bingka Ubi Kaya looks very good. My old father loves this kueh and has challenged me to make it. Wonder if you can break promise once and share with me.
My email: ovenfrsh@singnet.com
Thanks!

Hello there. My husband and I just bought a Filipino made bingka ubi from the supermarket and finished off the pack (we currently live in Kuwait). Your photo of the Nonya Bingka Ubi looks so extremely soft, moist and mouth watering. We both love this kuih so much and we are hoping that you might be persuaded to share this particular recipe with us. Please, we would really appreciate it especially being far away from home and my Austrian husband would be delighted to bits to bite into a really good Binga Ubi. Email address is ranislodge@gmail.com

Many thanks):
Anis
