Orange Snow Skin Mooncake

Recipe

Ingredients
105g kao fen (cooked glutinous rice flour)
30g shortening
95g icing sugar
1tbsp fresh milk/evaporated milk
100g water
60g orange juice
1tsp orange essence
few drops of orange food colouring

Filling
400g lotus paste

Dusting
50g tapioca flour/Hong Kong flour
(steamed for 10mins, cool and sift twice)

Steps:
Dough:
1. Sift kao fen and icing sugar together.
2. Rub in shortening into the flour mixture until it resemble bread crumb.
3. Mix all the liquid, colouring and essence together.
4. Add in liquid mixture into the flour mixture and mix to form soft dough. Do not overmix. (You may need more or less liquid depend on the quality of the flour. Dough will look rough but soft in texture.)
5. Cover the dough and rest in the fridge for 15mins.

Filling:
1. Divide the lotus paste into 10 portions of 40g each.
2. Roll them into balls.

Shaping:
1. Divide dough into 10 portions of 37g each.
2. Dust the surface, rolling pin and mould lightly with flour.
3. Roll out the dough, leave the centre slightly thicker than the edge.
4. Wrap the dough with the lotus paste and seal the edges.
5. Press into the mould and plunge it out slowly.
6. Use a brush to brush away excess flour around the mooncake.
7. Chill in the fridge and serve.

Note: Weight of the skin and filling depend on the size of the mould.

Hi! Your mooncake look good! Does the orange snowskin gives the overall a refreshing taste? Do we need to add sugar for the skin? Your moulds look pretty too! May I know where can I buy them?

Hi Tina,

Yum Yum thumb up. This taste good compare to those sold in the market which used only food colouring. The overall is just right not too sweet, if you prefer sweeter you can add more icing sugar.

I order this mould from Esjoie blog.

May I know for this portion of skin and filling, did you use the
6R, 8R or the 10R mould?

Hi Sherene,

I used 6R 5.9cm diameter mooncake mould.

hi,
I also try making snow skin for first time a few days ago.my skin wasn't sticky at all. is that normal?can I use all coconut milk to replace all liquid ? thanks!

Hi Diane,

As long the snow skin is soft and not sticky then it alright. What I did is that I used coconut powder instead of milk. As food contained coconut milk can't keep long, have to consume it within one to two days.

Hi Diane,

I only estimate on the amount of coconut powder used just enough to give the light coconut smell and taste.

Hi,

how many days can this mooncake be kept? Can I substitute 10g of kao fen with wheat starch? Thanks.

regds,
christine

Hi Christine,

It can be kept in the fridge for 4 to 5 days also no problem. Just that the skin will turn slightly dry.

You can give it a dry. As for my recipe, I already used tapioca flour for dusting so I don't think it necessary to substitute 10g of kao fen with wheat starch.
