Happy Flour, need your advice on why we need to spray water before baking the cupcakes? Was wondering whether the batter can be baked in a loose base pan instead of cupcakes?

Hi Kimmy,

This cake can be baked in a baking tin. I understood that water is spray on the surface of castella cake before baking to keep the crust moist and prevent over browning during the long baking hour. I think for this cupcakes this also serve the same purpose. However I didn't spray water as I felt that it is unnecessary. This cupcakes has a short baking time.

OIC, but what's the baking time if I'm using baking tin? Are your cupcake casings the parchment type?
Thanks Happy Flour - I'm learning so much tips on baking from you and I'm more confident to try the various cakes.

Hi Kimmy,

For baking tin bake at 180C for 25-28mins. I'm using the usual cupcake casing.

Glad that my little tips did help you. Don't worry as you bake more often you will get to understand more. You will get even better by learning though trial and error.
