Do you make your own lotus paste or did you buy ready-made ones? If you make your own do you have a recipe for it? my home-made paste didn't turn out looking shiny and smooth - it was only that way right after cooking, but after it cooled it became drier and fall apart upon cutting the mooncake..
Thanks, this is the first time I made this baked mooncakes. So far so good. :) Next year, I will make the baked mooncakes earlier as it take a few days for the skin soften and taste better.

I'm too lazy to cook my own lotus paste, too much work already. I bought mine from Sun Lik which has a nice nutty taste.
