your beautiful macarons are so beautiful. Shame to tell i still not solve the probelm of air pocket. i used wilton candy thermometer. when i put it into the boiling water, the highest reading is only 93C. Is there something wrong with my thermometer? THANK YOU.

Hi Shiau Li,

For macarons we don't want any air bubbles in the batter so you have to stir the batter to get rid the air bubbles in the egg white. Sometime I even bang the bowl to burst the air bubbles in the batter.

Why don't you bring the candy thermometer back to the shop and consult the sale assistant.

Hi Happy Flour,

I did the caramel sauce today and I will begin doing the macarons next week. However, my caramel sauce is quite runny I don't think I'll be able to pipe it on the macarons. Could you please advise what shld I do to have a thicker caramel sauce?

Hi Melissa,

The caramel sauce will thicken when it cool and harden when you kept it in the fridge. Thaw the caramel sauce in a bowl of warm water for a while until it is piping consistence.

Cool! I've yet to venture into macarons although it had been on my To-Do list for the longest time. Procrastinating for 2 reasons, very sweet dessert and unguaranteed success. Hope to make these one day.

I used any brand of icing sugar which I can get from the supermarket or provision shop. I don't use any particular brand.

Did u bake ur macarons on lower or middle rack of oven? i hv one silly question.I hv oven termometer.but confuse where i should put the termometer.Is that put on bottom of oven or put on the lower rack ?thx.

I place the tray at the middle rack. Sorry, I don't use oven thermometer so I don't know where to place it.
