Recipe adapted from Y3K Cookies by Alan Ooi
130g icing sugar
1tsp pandan paste
260g cake flour
1/4tsp baking powder
40g hoen kwee flour or greenpea flour
20g custard powder
20g coconut powder
some red dried cherries (diced)
1. Preheat oven to 165C.
2. Sift flour and baking powder together and set aside.
3. Cream butter, shortening and icing sugar together until light and fluffy.
4. Beat in the eggs and pandan paste.
5. Fold in all the flour and powder to form a soft dough.
6. Spoon dough into a piping bag fitted with a nozzle.
7. Pipe into small paper cup and press a red dried cherry on top.
8. Arrange it on baking tray and bake in a preheated oven for 15-20mins. The cookies must be well-baked but not brown.
9.Remove and cool on a wire rack.
10.Store in airtight container.

Last year I baked this but not enough. So this year I baked more. This is also my boys favourite.
what is pandan paste ?
Pandan paste is pandan essence in a concentrate form which include the green colouring in it.
i dont have the green pea flour is there any substitute for it .
You can replace it with corn flour.

if we want make our own Green Pea flour can we take frozen green peas and blend to a powder ..
is that how u make or buy the green pea flour ..
but in case if i want to make green pea flour can i go for frozen peas and blend to powder
I bought the green pea flour from supermarket, it is pack in a tube. I did post the picture of green pea before. You can look it under kueh 'Sweet Corn Hoon Kueh'.
Sorry, I'm not sure whether the quality of green pea flour is it the same as the one you blended. You can give it a try or replace it with corn flour instead.

actually i bought a Pandan Paste but its in Can so if i open that one iam sure it wont stay for longer as it hasnt come in like platic bottles what we get for vanilla essence any tips to store for longer usage dear
it would really help me a lot ..
Buy a plastic bottle and transfer the pandan paste into it and write the expire on the bottle.

water not like paste .
it says pandan leaves extract i think i got a wrong one Happy four

You can also use that. Don't discard it. I think it should be the same as pandan essence. Does it has a nice fragrant of pandan leaves?

its totoally liquid form with water yeah it does have the fragnace of pandan leaves but its just extract with residue sitting on bottom
thats it i dont know whether i could use it for this recipe ,if yes then should i pour 1tsp of liquid pandan extract will it give the same results dear ..
regarding icing sugar can u use confectionar sugar is it ok it is also a powdered form which we use in cakes
and custard powder is it jelly brand ...
actually i know 2 types of custards one which we use in in icecreams and fruitcustard which u use in fruits or the other which we use in cakes with jelly brand on it
That is not pandan extract, it pandan juice. You can't use it for cookies but can use it for cake instead.
Yes, you can use confectioner sugar. I just used any custard powder available in the bakery mart or supermarket.

Coconut powder is not desiccated coconut. You can buy coconut powder from any supermarket.
