Chocolate Brownie Muffin
Recipe (yield 4 muffins)
Ingredients
40g unsalted butter
75g dark chocolate
50g dark brown sugar
1/4tsp vanilla paste
1 egg
50g plain flour
1/4tsp salt
1/2tbsp cocoa powder
30g dark chocolate chips
Steps:
1. Preheat oven at 170C.
2. Mix flour, cocoa powder and salt together, set aside.
3. Beat egg and vanilla paste together, set aside.
4. Melt butter, dark brown sugar and chocolate in a big bowl over a simmering water, stir gently.
5. Remove from heat, stir in egg mixture till well mixed.
6. Fold in flour mixture till well mixed
7. Lastly, mix in chocolate chips.
8. Fill 4 paper cup with cake batter.
9. Bake in a preheated oven for 15-20mins.
10.Remove cupcake brownies from oven and cool it on wire rack.

Chocolate Fudge Brownies
Recipe
Ingredients
120g unsalted butter
60g bittersweet chocolate
100g raw sugar
1/2tsp vanilla paste
2 eggs
70g plain flour
1/2tsp salt
70g semi-sweet chocolate chips
Steps:
1. Preheat oven at 160C.
2. Mix flour and salt together, set aside.
3. Melt butter and chocolate in a big bowl over a simmering water, stir gently.
4. Remove from heat, stir in sugar until it dissolved.
5. Beat in vanilla paste and eggs.
6. Mix in chocolate chips.
7. Lastly, mix in flour until just combined.
8. Pour batter into a lined rectangular pan (16cm x 21cm x 4cm).
9. Bake in a preheated oven for 30-35mins, until a tester inserted in the centre and comes out clean.
10.Remove brownies from tin and cool it on a wire rack.

Bubble Rice Brownie
Recipe
Ingredients
110g unsalted butter
260g cooking chocolate (break into pieces)
1tbsp cocoa powder
1tbsp instant coffee powder
70g brown sugar
1/2tsp vanilla paste
2 eggs
80g plain flour
1/4tsp baking powder
1/4tsp salt
50g bubble rice/puffed rice
Steps:
1. Preheat oven to 180C.
2. Mix flour, baking powder and salt together, set aside.
3. Melt butter and chocolate in a big bowl over simmering water.
4. Remove from heat stir in instant coffee powder, cocoa powder and sugar until dissolved.
5. Allow chocolate batter to cool slightly.
6. With a hand whisk, beat in eggs and vanilla paste.
7. Stir in flour mixture and half portion of bubble rice into chocolate batter till combined.
8. Pour chocolate batter into a lined and greased 7inches square tin.
9. Scatter balance bubble rice on it surface.
10.Bake in a preheated oven for 30mins.
11.Allow brownies to cool in tin for 5mins then remove and cool it on wire rack.

Triple Chocolate Brownies


Recipe from Fresh with Anna Olson. A rich and moist brownies. Mmm...yummy! :)
I am submitting this post to Aspiring Bakers #7: Chocolate Delight (May 2011) by Tested & Tasted.
Recipe
Ingredients
150g unsalted butter
100g semi-sweet chocolate
180g bittersweet chocolate
160g caster sugar
1tsp vanilla paste
3 large eggs
125g cake flour
1/2tsp salt
80g white chocolate chips
80g chocolate chips
Steps:
1. Preheat oven to 160C.
2. Mix flour and salt together, set aside.
3. Melt butter and chocolate in a big bowl over a simmering water, stir gently.
4. Remove from heat, stir in sugar until it dissolved.
5. Beat in vanilla paste and eggs.
6. Use a wooden spoon or spatula, fold in flour and all the chocolate chips until just combined.
7. Pour batter into a lined and greased 8inches square pan.
8. Bake in a preheated oven for 35-40mins, until a tester inserted in the centre and comes out clean.
9. Remove brownies from tin and cool it on a wire rack before slicing.

Rich Chocolate Brownies
Recipe
Ingredients
175g unsalted butter
160g semi-sweet chocolate
70g dark chocolate
100g dark brown sugar
140g castor sugar
1tbsp coffee powder
2tsp vanilla paste
4 eggs
125g cake flour
1/2tsp baking powder
1/4tsp salt
60g chopped nuts (any nuts of your choice)
90g chocolate chips
Steps:
1. Preheat oven to 180C.
2. Mix flour, baking powder and salt together, set aside.
3. Melt butter and chocolate in a big bowl over a simmering water.
4. Remove from heat, stir in coffee powder and sugar until dissolved.
5. Beat in vanilla paste and eggs.
6. Use a wooden spoon or spatula, fold in flour, chocolate chips and chopped nuts until just combined.
7. Pour batter into a lined and greased 7" x 10" rectangular tin.
8. Bake in a preheated oven for 30mins.
9. Remove brownies from tin and cool it on a wire rack.

Almond Brownies
Recipe
Ingredients
150g butter
100g sugar
3 egg
165g chocolate (melted)
100g cake flour (sifted)
adequate almond flakes (roasted)
Steps:
1. Greased a cassata mould/loaf pan with butter and sprinkle the almond flake around it.
2. Chill the mould in the fridge, so that the almond flakes will stick to the mould.
3. Preheat oven to 180C.
4. Cream butter and sugar until light and fluffy.
5. Slowly beat in the egg until well combined.(If batter curdle add in some flour.)
6. Next beat in the melted chocolate until combined.
7. Lastly fold in the flour until well combined.
8. Pour batter into mould.
9. Bake for 40-45mins, if skewer comes out clean when inserted into cake then it done.
10. Leave cake to cool in pan for 5mins then remove and cool on a wire rack.

Chocolate Brownies
Recipe
Ingredients
Brownies:
65g butter
120g cooking chocolate (chopped)
65g brown sugar/fine sugar
4 eggs (lightly beaten)
45g milk
1/4tsp vanilla essence
110g cake flour
30g cocoa powder
1/2tsp baking soda
1/8tsp salt
50g walnuts (toasted and chopped)
35g chocolate chips
Ganache:
80g whipping cream
160g cooking chocolate (chopped)
10g butter
Steps:
Brownies:
1. Preheat oven to 175C.
2. Sift flour, baking soda, cocoa powder and salt together and set aside.
3. Melt butter and chocolate in a double-boiler over a simmering water.
4. Remove from heat, stir in sugar until dissolved.
5. Add in milk, vanilla essence and beaten eggs.
6. Use a hand whisk, fold in the sifted flour mixture and walnuts.
7. Pour half of the batter into a 7inch lined and greased square tin.
8. Scatter the chocolate chips around and pour the remaining batter over it.
9. Bake in a preheated oven for 30 to 35mins.
10.Remover brownies from tin and cool on a wire rack.
Ganache:
1. Melt chocolate, butter and whipping cream together in a double-boiler over a simmering water.
2. Leave to cool.
Assemble the brownies:
1. Spread the ganache on the brownies and decorate as desired.
2. Cut into small pieces and serve.
