Your pan is too hot. Just coat the nian gao with batter and pan fried it over medium fire till it browned. The nian gao is cook so there is no need to fry for a long time. I just mix plain flour, rice flour, salt, egg and water together. I didn't measure on the quantity just estimate only.

hahaha..i stock up many nian gao to last me through the whole year....
